Yauatcha.

What would you blow your crowns on?
Fino, except if they give some food for free.

When summer arrives, what's on your barbecue?
Baby squid and lamb shoulder.

The sun's out, you're not at work, what are you drinking?
Some Pimm's, like the English.

What do you drink on a hangover?
A beer, that helps.

Where's your favourite place for alfresco eating in London?
Shoreditch House.

We all want to eat responsibly - how important are topics like the environment and sustainability to your restaurant?
Very important. Our fish and chips are very responsible.

What is the taste of London?
A slice of the world of food made with style and respect.

If you were booking a holiday based on the local cuisine where would you be going and why?
French Polynesian food. I cannot resist their products and simple way of assembling them.
