Gordon Ramsay's Maze restaurant interior at Taste of London 2010, chef Jason AthertonMaze is Gordon Ramsay's stylish and casual small plate take on fine dining. Tasting menus are the order of the day, with 'lunch bites', 'early supper tasting' and a chef's menu along with the more conventional à la carte. The menu highlights local ingredients and ranges across British and European contemporary cooking. Seasonal dishes dominate: a 'Scotch broth' with roasted halibut, black pudding, Argyle ham and turnip purée; braised shoulder of aged lamb, faggot, parsnip purée, pear jam, ox-eye daisy and cob-nuts; clementine mess.
