Maze is Gordon Ramsay's stylish and casual small plate take on fine dining. Tasting menus are the order of the day, with 'lunch bites', 'early supper tasting' and a chef's menu along with the more conventional à la carte. The menu highlights local ingredients and ranges across British and European contemporary cooking. Seasonal dishes dominate: a 'Scotch broth' with roasted halibut, black pudding, Argyle ham and turnip purée; braised shoulder of aged lamb, faggot, parsnip purée, pear jam, ox-eye daisy and cob-nuts; clementine mess.
